Canh Chua (Sour Soup)

I made Canh Chua today for my family. It is dish that we can always enjoy. There are many different variations of Canh Chua. Here is one that we grew up with.











Here is the recipe:
1 pint of fish paste (or pork paste)
1 lb of shrimp
1/2 yellow onion
6 oz of okra (cut into 1/4 pieces)
1/2 onion
1/2 a pineapple (cut into 1/2 ince slices)
1/4 seedless tamarind
chicken stock
4 gloves of garlic
3 stalk of taro stem (cut into 1/2 inch slices)
1 1/2 tomatoes (cut into 1/2 inch slices)
1 cup of bean sprouts
1 spoon fish sauce
1/4 cup sugar

1. Cook the chicken stock until boil. Through in the onion and garlic. Add fish sauce, sugar, pineapple and tamarind. Let boil for about 5 minutes.
2. Add the fish paste. You can also cut up shrimp and mixed it in with the shrimp paste. Or you can throw it into the soup later. Cook for 5 minutes.
3. Add okra and taro stem.
4. Add shrimp. Cook until shrimp is done.
5. Add tomatoes and bean sprout. Immediately after adding them, turn off the fire.

This recipe is meant to be tweaked. You can add more tamarind if you want it to be more sour. You can add or not add the veggies above. You can also add catfish to the recipe instead of fish paste.
