Vietnamese Pickled Daikon and Carrots (Do Chua) Recipe
Have you ever had a banh mi before? It’s a Vietnamese baguette sandwich filled with goodness. It is usually filled with some type of meat, cilantro, cucumber, jalapenos, and pickled daikon and carrots. It’s really easy to make. Let me know what you think if you tried to make it.
I usually combine 1 cup of sugar with 1 cup of vinegar and 1/2 cup of water. But to be honest, I’ve tried different amount of each and it still turns out crunchy, sour and sweet. I used a Paderno Spiral Vegetable Slicer for the carrots and daikon because it’s so easy and fast. Go head and call me lazy. Wait a few hours and you are good to go. They last a pretty long time in the fridge, at least up to a month for me.
