One of my favorite Vietnamese dish is wrapping anything in rice paper. I can eat spring rolls for days and weeks and not get sick of it, literally. I made this combination of Vietnamese pork skewers which is a popular item in our culture. Usually, it is eaten with vermicelli noodles and veggies. Today, I just felt like wrapping it into a spring roll. I also made grilled garlic shrimp for extra protein. For vegetables, we have lettuce, cucumber, mint and cilantro. There is also pickled carrots and daikon (đồ chua). I was to busy eating to take a picture of the spring rolls. Next time.
